I’m Craig Ballantyne and I’m here with my friend Kardena Pauza. I’ve flown all the way from Toronto to California to meet with Kardena and she is going to help me with my vegetarian diet and how to make better choices with food. She is here to help you do the same thing!
There are a lot of diet and weight loss programs out there, but a lot of them don’t address the vegetarian diet. I want to help you with that.
I’m getting so many e-mails from people all over the world asking how to transition from a classic meat eating diet to a vegetarian diet. It’s so popular right now because of the health and environmental impact it has on us. Were going to focus on giving you the information to make the transition in your diet or if you are already a vegetarian, help you to make even better choices.
So many times when people are trying to transition from a meat to vegetarian, they dont know what foods to eat or the foods they are eating are high in sugar or hydrogenated oils. These are often hidden in their foods which will cause them to not lose weight. Or, if people are already vegetarians, they need to figure out what is in the foods that they are already eating. My job is to come in and give you all the information you need to make that transition and to help you hit your weight loss goals.

How to lose weight healthily & happily:
1. Eat foods that are nutrient-dense. Eat a variety of healthful, whole foods.
2. Avoid nutrient deficient foods, like many processed foods. Avoid dangerous foods: meat, dairy and eggs.
3. Exercise regularly, preferably an hour a day.
Counting calories is a tried and true method for weight loss. But in order to stay healthy, those calories should come from healthy, whole foods. And in order for your heart and lungs to stay healthy and your body to look toned, you need to exercise, too.
I know this from experience and research. I recommend reading:

- The Thrive Diet
- Eat More, Weigh Less
- Fit or Fat
And no, I’m not perfect. I don’t exercise enough and I still eat too many processed foods. But I am a healthy weight and I haven’t got heart disease, diabetes, or cancer. I am a vegan.

? Cold Thai Summer Vegetable Stew ?
* I n g r e d i e n t s *
…..All quantities in this recipe are up to you! Use your intuition. 
— 1 Young Coconut (water)
— Carrots, several to be juiced
— Carrots, a few to be chopped
— Peas, shelled
— Cherry Tomatoes
— Kale, with leaves torn off of stems
— Collard Greens, with leaves torn off of stems
— Red Chard, with leaves torn off of stems
— Lettuce
— Garlic Cloves
— Optional Additions…only if you need them!: sea salt, olive oil, hot pepper, avocado, corn
* P r e p a r a t i o n *
— 1) Open the young coconut—refer to this video if you need help: http://bit.ly/u9Q4j —and pour its water into your Vita-Mix, or other high-powered blender of your choice. http://bit.ly/GZsuq or http://bit.ly/3OTXD9
— 2) Add chopped carrots, shelled peas & cherry tomatoes, followed by all the leafy greens: kale, collard greens, lettuce & red chard (make sure to tear the leaves off of the thick stems first!), and any of the optional additions you might need.
— 3) Lightly blend in your Vita-Mix, but not too much…you’ll want to leave it looking like a chunky stew…and then transfer to individual soup bowls.
— 4) Run the carrots you designated for juicing through your Breville juicer, or whatever the best juicer is for you. http://bit.ly/mIrEW
— 5) Serve soup with a pitcher of carrot juice offered on the side. The carrot juice allows people to thin out, sweeten and/or tone down a spicy soup, so as to suit their individual taste buds.

How to make Lentil Walnut Veggie Burgers Video. Veggie Burgers are a nutritional alternative to beef burgers. Many people don’t think of making their own veggie burgers but they are really easy to make at home. Store bought veggie burgers are nutritional but often very high in sodium and preservatives. You can substitute the eggs in this recipe with “flax eggs” which are a mix of 6 tbsp ground flax to 2 tbsp boiling water. The milk in this recipe can be substituted with either soya milk or rice milk. This makes the recipe completely vegan!
Lentils are high in fiber which makes them a good protector against bowel cancer. I recommend organic, low sodium lentils if you are buying canned. They are an excellent source of protein and are an important source of B vitamins, especially B3, which is essential for both a healthy nervous system and digestive system. They are high in iron, zinc and calcium and are a good replacement for red meat. Like meat, the iron in lentils is better absorbed when they are eaten with a good source of vitamin C like leafy green vegetables.
Walnuts are an excellent source of omega-3 fatty acids, a special type of fat that is essential for our bodies, but that the body cannot produce.

Walnuts are also a very good source of monounsaturated fats.
Walnuts contain many powerful antioxidants, including ellagic and gallic acids, pus antioxidant phenols and vitamin E. The minerals copper and manganese are also found in abundance in these tasty nuts.
