There are health food stores and restaurants in PR and also large supermarkets sell organics products.

Find organic food at the resort? They may have some vegetarian options at the menu but not sure if "vegetarian food" and "organic food" are the same for them and for you.
References :
in our culture pork is a must in the main menu, we do eat unhealthy fatty foods, but for instance not everyone is the same (my mom and son are veggie persons) they eat no meat and dairy products at all, so they eat organic food. I recommend you go to supermarkets such as Amigo, Pueblo, or Walmart and there is a section of organic foods. You wont find organic foods around in hotels or resturants that have organic foods. there are naturalist supermarkets (only a few), I live in bayamon and in the main route 167, you will find a few of these natural organic little shops. if you ask store locals they will help you.
